Abstract

The use of beetroot and Dayak onions has been studied to have antioxidant properties. It can be turned into packaged tea to simplify its use as a health drink and maximize the use of conventional medicinal plants. This research was conducted to find the right herbal tea formula. Herbal tea combines beetroot and Dayak onion with 5 formulations (F1, F2, F3, F4, F5). Five alternative formulations of herbal tea were subjected to organoleptic testing, which considered colour, aroma, shape, and taste to identify the most popular formulation. The data obtained were analyzed using statistics with the Kolmogorov-Smirnov and Shapiro-Wilk tests to determine whether the data were significant and normally distributed. The analysis of colour, shape and taste obtained data of significance < 0.025, meaning Ho is rejected, and the data is not normally distributed. While the aroma analysis obtained a significance of > 0.025, meaning that Ho is accepted, the data is usually distributed. For the Kolmogorov-Smirnov test, the significance limit (α) is 0.025; from the data obtained, the colour is 0.001, the aroma is 0.099, the shape is 0.002, and the taste is 0.000. From this research, it can be said that the formula that the panellists prefer is F3.
